Actually not. Im not having any of those issues. The problem that i am having is because the pulley blocks one of the pieces that goes in the wheel that makes it so the wheel can turn on the bolt. Because of the pulley the nuts that hold the bolt to the frame rub against the pulley and not the piece in the wheel like it is supposed to. I don't know what the piece in the wheel is called. I can try and make the hole in the middle of the pulley bigger but i don't have any metal cutting tools. It works for now, but i will make it better eventually.

Dry them, if you keep them in dry and airtight they can keep for 2 years. Then rehydrate them as you need them.

You could also make duxelles which is a sort of concentrated onion and mushroom paste and freeze that.

You're probably getting some rattle on the far edge of the board under the mill. Pressure from the belt means the mill will want to tip towards you. The ideal solution is ofc bolting everything to the floor. but meantime, you need a counterweight on the opposite side of the mill from the power source. I'd just bolt on another length of number and tuck it under a heavy piece of furniture or a couple of breeze blocks.
